Crispy Chicken Cornflake Wrap

Juicy chicken strips are coated in crushed cornflakes and air-fried to golden perfection, then wrapped up with crispy bacon, fresh lettuce, tomato, melty cheese, and a smoky chipotle mayo.

- 1 Chicken breast large
- 1 Egg
- 2-3 cups Cornflakes crushed
- 1 Bacon rasher cooked and diced
- 2 Cheese slices cut into thirds
- Lettuce
- 1 Tomato sliced
- 2 Tortilla
Chipotle Mayo
- 2 Tbsp Chipotle seasoning
- 4 Tbsp Mayonnaise
Cut chicken breast into 4–6 strips. Dredge in flour, dip in beaten egg, then coat in crushed cornflakes. Spray your air fryer basket and the coated chicken lightly with oil. Air fry at 185°C for 10–12 minutes, flipping halfway, until golden and cooked through.
In a small bowl, mix mayonnaise and chipotle seasoning until smooth. Add a splash of lime juice or water if it’s too thick.
Spread a layer of chipotle mayo in the centre of each tortilla. Add lettuce, tomato slices, bacon, 2–3 crispy chicken strips, and cheese slices.
Fold into a burrito shape. Heat a pan over medium-low heat and toast the wrap on both sides until golden. Cut in half and top with extra chipotle mayo to serve.
