Roast Tomato and Whipped Feta Toast

Creamy, toasty, and bursting with flavour, this Roast Tomato and Whipped Feta Toast is your new favourite way to upgrade breakfast or brunch! Sweet, blistered cherry tomatoes roasted with garlic and paprika are piled onto golden baguette slices slathered with a silky whipped feta and cream cheese spread.

Ingredients
  

  • 125 g Cherry tomatoes halved
  • 3 Garlic cloves
  • 1 tsp Paprika
  • Olive oil drizzle
  • 2 Tbsp Cream cheese
  • 100 g Feta Danish
  • 1 tsp Milk
  • 1 Baguette
  • Cracked pepper
  • Basil leaves

Instructions
 

  • Preheat oven to 180°C. Place halved cherry tomatoes, garlic, paprika, and a drizzle of olive oil on a baking tray. Toss to coat and roast uncovered for 30–40 minutes, until softened and just browned.
  • In a bowl, mash feta, cream cheese, and milk with a fork. Mix until smooth and spreadable, or blend in a food processor for a silkier texture.
  • Slice baguette into pieces and toast until golden. Once garlic is roasted, rub the cloves lightly over each slice of toast.
  • Spread the whipped feta onto the toast, top with roasted tomatoes, cracked pepper, and basil. Drizzle with leftover tomato-garlic oil from the tray if desired.
